The 'Flying Shack' is the old tin shed in the kiwifruit orchard that occasionally gets visited by an elderly Swiss man to make grappa and schnapps out of the surplus fruit and grape skins we grow on the property. The fumes of the distillation are dangerous. So is the flame. Henri's quality control method is to fling a tiny bit of the spirit into the flame and see if it flares up. A friend had too much of the fumes one day and in his altered state of consciousness said, "I can fly". So the Flying Shack schnapps brand was born. The door of the shed has 'Spirit of Henri' engraved in it.
